Charleville is famous for its mainstream cheese production but this is very different - Victor and Breda O'Sullivan's Bluebell Falls Goats Cheese is handmade daily, exclusively from their own milk.
The goats - a mixture of white Saanen and brown Toggenburg goats, both from Switzerland, and black and white British Alpine goats - roam freely on the farm and the cheese takes its flavour from their rich grassland.
Every morning and evening, their milk goes straight from the milking parlour to the dairy, where Breda and her team transform it into a delicious creamy soft cheese that is eaten young - it 's ready to eat just a couple of days after it is made.
Everything is done on site and, although best known for their goats cheese, the O'Sullivans also make a cows cheese, Bluebell Falls Jersey Cream Cheese.
