Just prime cuts.” is her motto and this philosophy is the simple reason why Jane Russell’s Original Irish Handmade Sausages have been such a success, ever since she first started selling them at farmers’ markets and then - in response to customer demand - launched them onto the retail market in 2004.


Since then, these high-meat, low-fat ‘proper’ sausages have become the benchmark for other small producers aiming to make a quality product. Perhaps this is not surprising, as she’s the fifth generation of a prize-winning pork and bacon curing family and she credits her grandfather with the recipe for the Original Irish Sausage.


Following the success of the original sausage, her travels have inspired other great products, including her Toulouse Sausage and her Beef & Guinness Sausage. While the company may grow in size, consumer trust in the brand is well founded and any new products developed are sure to be consistent with her philosophy for quality and flavour.


Sold at: Farmers’ Markets (Naas, Dun Laoghaire, Red Stables, Marlay Park, Farmleigh & BrookLodge) and stocked by selected speciality stores including Caviston’s, Morton’s, Liston’s, Nolan’s, Donnybrook Fair and Fresh at Smithfield; Wrights at Dublin Airport; Ardkeen Quality Food Stores of Waterford.
